Roast Salmon with Broccoli Rabe & Quinoa
2 5oz portions of salmon
1 bunch rabe, washed and trimmed lengthwise
2 cloves garlic, sliced lengthwise
2 tbs olive oil
1 cup cooked quinoa (it's a rice like healthy grain found in all stores - cook according to box)
Heat oven to 400
Heat skillet and add 1 tbsp of olive oil
When oil is hot, add salmon and sear on one side for 3 minutes, flip and sear other side and remove from pan
Place on baking tray in oven for 7-8 minutes
Drain excess oil from skillet and add the remaining oil
saute the garlic for 1 minute
turn heat down to medium, place rabe in pan, 1/4 cup water and cover and steam for 2 minutes
serve the greens on a platter with the salmon on top and quinoa on the side

YUM!
